There is hardly a cut of pork that suits this style of cooking as well as ribs do. Within 2 hours of cooking, what starts off as tough pork ribs boiling away in a thin soup ends up being a brilliantly tender braise with a thick, sweet sauce. Really, with soy, mirin (sweet cooking sake), garlic and ginger, you can’t go wrong. Start off by browning 1.5 kilos of pork ribs in a heavy cast iron pot. I used leftover lard for the browning and browned the meat in 2 batches. Tip off any rendered fat, add 100 ml of soy sauce (I used gluten-free tamari), 100 ml of mirin, 400ml pork of beef stock, 2 finely chopped cloves of garlic, 5 star anise (optional) and 2 tablespoons of grated ginger. Bring to the boil and then turn down to a gentle simmer and cover for 2.5 hours. You are looking for the pork to be falling from the bone and for the sauce to have thickened. If the pork is still not tender enough and the sauce already looks too thick, add a little water and cook covered until the pork is done. If the opposite happens and the pork is already done while the sauce is too thin, uncover the pot and take the heat up, stirring often until the sauce thickens. Stir the pork to glaze it with the sauce. I ate this dish as is, with no accompaniment, since I rarely eat grains; but for those of you who do, rice would go perfectly well.

On the last week of each December I go through all my Sugar Rush posts from the year and think, sheeeesh we ate so many sweets this year! And then I cross my fingers and hope for no cavities. I've been Sugar Rush-ing since 2007, and only in a city like New York could you do this and never repeat a single dessert. From marshmallow apples oozing liquid caramel to decadent red velvet cakes and whisper light coconut cakes to gigantic, golden honey toast, desserts seem to only get better and even more delicious with each passing year. I’ve mentioned before that I personally don’t consume grain products everyday (see sweet breakfast omelette – what to eat when you don’t eat toast), which is mostly due to the fact that most stores don’t carry products I deem worthy of consuming. For instance if you look at the label of  most commercial ‘sourdough’ breads, you may notice that there are around 30+ ingredients (most of these ingredients are not real food and are from refined products; sourdough should just contain a few ingredients  (yeast, water, flour and salt, usually)). These commercial grain products I usually find disapointing so I don’t buy them (they also aren’t that nutritious as well!).



Apart from slow-cooked oats, I like to have bread and other grain products as more of a treat, rather than an everyday staple (most are refined anyway). But if you make them yourself they can be so more nutritious & really delicious! As a treat,  I made a batch of delicious Hot Cross Buns (HCBs) for Good Friday. These HCBs were made using wholemeal spelt flour (rather than wheat), buttermilk for extra flavour and to help them rise and I added dates instead of sultanas or currants!  So if you would like a healthier while still delicious version of HCBs I hope you give these a go :).

Now onto the recipe…



Recipe: Buttermilk, Spelt and Date Hot Cross Buns

Allergen info/recipe info: This recipe does contain gluten (so this recipe is not suitable for those who have issues with gluten/celiacs), dairy and eggs. It is lacto-ovo vegetarian-friendly.

This recipe is a little bit denser than regular HCBs due to the wholemeal spelt flour.

Makes: 6 HCBs.

Ingredients:

1/2 C. buttermilk (or the same volume of whole milk mixed with 1 tablespoon of active culture yoghurt or kefir)
1 tsp. honey
1 tsp. yeast
1.5 C. wholemeal spelt flour (or sprouted spelt flour), sifted
2 tsp. mixed spice
1/2 C. coconut or rapadura sugar
a pinch of salt
1/2 tsp. fennel seeds
1 orange, zested
1/4. C. dates, pitted and chopped
1 egg, beaten
1 tsp. vanilla extract or 1/2 tsp. of vanilla seeds
2 tbsp. butter, melted and cooled
milk, to glaze the HCBs
For the crosses:

~2 Tbsp. extra spelt flour
1 tsp. coconut sugar
enough water to form a paste
How to:

Bloom the yeast: Heat the buttermilk in a saucepan on low heat till just warm. Turn off the heat and pour the warm buttermilk in a jug. Mix in the honey and sprinkle the yeast on the top of the buttermilk. Leave to bloom (it gets bubbly & the yeast gets activated) for around 10 minutes.
Sift dry ingredients: In a large bowl sift the spelt flour, coconut sugar and mixed spice. Stir in the fennel seeds, orange zest and chopped dates.
Mix wet ingredients: Beat the egg into the buttermilk and add the vanilla extract & melted and cooled butter. Pour the buttermilk-egg mixture into the flour.
Mix, Knead & Rise: Using clean hands (or a butter knife) begin to mix the mixture together. Knead it for a few minutes (I just kneaded it in the bowl) or until it becomes elastic (you may knead to add a bit of extra flour to the bowl or board if the dough is too sticky). Leave the kneaded ball of dough in the bowl and cover it with a tea towel. Leave this in a sunny warm position in your kitchen for around 2 hours (or overnight) or until it doubles in size.
Divide: When it has doubled in size, divide the ball of dough into six equal portions. Knead each individual portion once again until elastic.
Rise again & Preheat Oven: Place these pieces into your chosen greased baking tray (I used one around cm wide and cm high). Place each piece about 1-2cm apart. Place this tray covered with the tea towel again and leave to rise for another hour. In the last 10 minutes of rising preheat your oven to 160 degrees C.
Score & Bake:  Now get the tray with the dough balls in it and using a knife cut two lines across the top of each one to form a cross. Bake the HCBs in the oven for 15-25 minutes at 160 degrees C (fan-forced) or until they are light brown and cooked through. To test if they are cooked you can poke a skewer in one of them and if they are sticky then it isn’t quite ready yet.
Make cross mixture (optional): (in some of the HCBs I didn’t add the paste cross- see the 2nd picture) Make mixture for the ‘crosses’ by mixing together ~ 2 Tbsp. spelt flour, 1 tsp. coconut sugar and enough water to form a thick paste.  In the last 6 or so minutes left of cooking the HCBs pipe the cross mixture into the scored crosses and spoon/brush a little bit of milk over the HCBs. Bake until they are cooked through.
Serve when hot with a bit of butter.

Update 6/4/12: Variation – Homemade Buttermilk, Spelt and Date Hot Cross Buns (With Chocolate!)



How I modified the above recipe:

For the first rise I left it to rise & ferment overnight (rather than the 2 hours below) at step 4.
I’ve made a varation on the above recipe my adding 1/4 C. of G & B organic milk chocolate (chopped into small pieces) to step 5 (I worked the chocolate chips into each of the 6 pieces of dough).

Ingredients:

1 white nectarine
1 tbsp. butter or coconut oil
full fat natural yoghurt
raw honey


How to:

Cut the nectarine in half and remove the pit. Grill the nectarine halves in a pan on both sides until lightly browned. Serve with a tablespoon or so of full fat natural yoghurt and a dash of honey.

Every now and then in the computer world we actually do hear about things that do not involve Apple or anything Apple related. It is rare, yes, but it does happen. One such instance is that Western Digital, a company known for their hard drives, has officially bought out Hitachi GST for a pretty $4.3 billion.

That's right, on Monday Western Digital told media outlets that they were buying Hitachi Global Storage Technologies for the equivalent of $4.3 billion. There were different things that comprised the entire deal which included a combination of $3.5 billion in cash with the addition of shares in the total amount of $50 million. Full terms of the deal included Western Digital's name remaining the same for the company and Hitachi GST CEO Steve Milligan joining Western Digital as President.

CEO of Western Digital John Coyne argued to media sources that the move was primarily for scale. Western Digital and Hitachi Global Storage Technologies would form a larger competitor company and would also have the advantage of better research as well as a wider range of products as Hitachi has focused primarily on fields like drivers for set-top boxes and a greater focus on mobile hard drives.

This move is an attempt by Western Digital to hedge their position and compete against a market that gets increasingly tougher each day. Hitachi has suffered with reduced influence whereas Western Digital has been battling it out with fellow American rival company Seagate. Western Digital's acquisition of Hitachi GST gives the company a improved position in the competition.

Consumers lining up to get their hands on the all new, low-priced Samsung Chromebook may want to wait. Google announced today that a new Acer Chromebook will be released tomorrow for the new low price of $199. This comes a little over a month after Google released the new Samsung Chromebook, at a then-low-price of $249.

The move by Google is an unexpected but pleasant one. Releasing a brand new Chromebook by a different manufacturing partner a month after the release of the Samsung Chromebook begs the question as to why the two were not released at the same time? Regardless of the timing, Google is now looking to make this Acer Chromebook the first truly mainstream Chromebook laptop.

Some of the new features, or to put it better, differences between the Acer and Samsung Chromebooks include storage and battery life.  The display of the Acer is the same as the Samsung Chromebook, an 11.6 in. display with a resolution of 1,366x768. The Acer Chromebook also comes with the same Chrome Operating System as the Samsung and the 100 GB of Google Drive Storage for two years. The differences, however, between the two computers as far as storage could not be more different. The Samsung Chromebook featured a SSD (solid state drive) that contained only 16 GB of storage, while the new Acer Chromebook has a traditional HDD (hard disk drive) that contains 320 GB of storage. This major leap in storage is sure to be a tipping point for many consumers who like the idea of the Chromebook but did not like the lack of storage. The other major difference, and really major flaw for the Acer-made Chromebook, is the decrease in battery life. While the Samsung Chromebook has a good 6.5 hours of battery life, the Acer Chromebook's battery lasts only 3.5 hours. This lack of battery life is sure to be a big issue for many potential customers who are not looking for a laptop that you have to "plug in" every few hours.

Google, with these two new laptops, and more specifically with the Acer Chromebook, is trying to get their Chrome Operating System into the mainstream computer world. Chrome Operating System, or Chrome OS, is a very basic and simple operating system that uses Google's popular web browser, Chrome, to operate. Users of Chrome OS do all of their interaction through the Chrome interface and can download and use applications from the "Chrome Web Store". Since the productivity and usefulness of this operating system is largely dependent on the internet, it has not become a huge success. With the addition of offline apps and the continual drop in price of Chromebooks, however, Google may finally see their product become mainstream.

While Google certainly has a long, and frankly impossible, shot of taking down Microsoft as the king of computer operating systems, they certainly are taking steps in the right direction. While the functionality of the Chrome OS may still be limited, the reduced price point for a "fully functioning laptop" is sure to attract many consumers. Only time will tell if the new $199 price point will be just what was needed to lure customers to their brand, but one thing is for sure, at that low price Google will get people's attention.
